Nick Nikolaiczyk's 40 years in the private club and hotel industry reveal him to be the "hands on" type, highly visible to guests and staff.  Nick has created unique menus, special foods and custom services while demonstrating excellent control of finances and staff.  Nick has been General Manager of Opryland Hotel's Old Hickory Restaurant, a 250-seat 5-Star Mobil Award fine dining room, University Club of Nashville, a 34,000 square foot private faculty club affiliated with Vanderbilt University with 1100 members and 75 staff, as well as several other clubs dating back to 1962.  The opening of Nick & Rudy's Steakhouse in August 2000 makes Nick a proud man.  He has drawn from his years experience to put together a first class restaurant with his long-time close friend,
Rudy Caduff.




Rudy Caduff has developed an impressive list of accomplishments in the Food & Beverage industry over his 25 year span. As Director of Catering for the Opryland Hotel complex, he established a high-profile presence in the community by involvement in many civic and nonprofit organizations.  He led a staff of 20 managers in the banquet area which generated in excess of $40M in revenue from conventions and the local market.  A 97.9% guest satisfaction rate in 1998 tops off Rudy's long Opryland career.  The August 2000 opening of Nick & Rudy's Steakhouse allows Rudy to again demonstrate his expertise to the community in a personal venture with a long-time close friend, Nick Nikolaiczyk.
